Beginuary cookies!

These soft gooey cookies were born from a need to clear all the post Christmas goodies.

Really its just a pretty fantastic basic cookie dough that produces soft chewy thick cookies.

I added a few handfuls of chopped celebrations and chopped brazil nuts to purge the cupboards of naughtiness but you could add smarties, choc chips and any kind of fruit or nut you like.... Get imaginative!


yields about 15 cookies.

Here's how........


Ingredients

300g plain flour

1 tbsp cornflour

1 tsp bicarbonate of soda

100g brown sugar

50g golden syrup

1 egg + 1 yolk

170g melted butter

100g chopped nuts (i used brazil but you can use whatever you like)

200g chocolate (i used mars & milky way celebrations chopped, but run with whatever you like)


Method

Pre heat oven to 175c

Using an electric whisk mix butter sugar, syrup, egg and yolk together until smooth.


Add wet mix to all dry ingredients and mix well with your hand until a soft pliable dough is formed.


Add chocolate and nuts and incorporate.


Roll balls of dough (golf ball sized) and place on a parchment lined baking sheet allowing room for them to spread slightly. then flatten them into burger shaped patties.

they should be 3/4 inch thick (this keeps them gooey!)


Bake on 175c for 13 mins or just browning on the edges.


Allow them to cool for 10 minutes on the paper, if you try to move them too quickly they will fall apart.


Repeat until all the dough is used.


Its totally allowed (in fact compulsory) to eat them warm!
