10 minute Tiramisu

If you’re looking for a super quick thoroughly luxurious dessert you can whip up in 10 minutes, and impress the pants off your allocated 5 dinner guests then look no further.

This knock spots of those shop bought synthetic tasting ones and takes just minutes to rustle up! All you need is a few good quality ingredients, no cooking involved!

Ingredients

250g Mascarpone cheese

150ml double cream

400ml strong coffee (I like Tully Brothers)

8 tbsp amaretto liqueur

3 tbsp icing sugar

1 tsp vanilla bean paste

1 shop bought madeira cake

2 heaped tsp brown sugar

50g dark chocolate grated

2 tsp cocoa powder

First start on the coffee, I like to use a really good one from Tully brothers, Their central American blend (rainforest certified) ‘all day session’ seems to work perfectly.

You’ll need about 400 ml (make it strong!)

Now add 4 tbsp amaretto and 2 heaped tsp brown sugar while its good and hot.

Allow it to cool completely.

Whisk the double cream to soft peaks, add the vanilla, icing sugar, 2 tbsp amaretto and mascarpone and whisk until creamy and spreadable.

Now cut the cake into slices, they need to be about 1 cm thick, you will need about 3 slices to cover your dish in 1 layer… think lasagne with the layering!

Ive used shop bought madeira here as it's a dense spongy texture, you can use leftover cake but this works brilliantly.

Spoon over and soak in coffee mixture, add a good sprinkle of grated dark chocolate then a layer of mascarpone mixture, keep repeating until you finish with a layer of mascarpone last.

Now finish with grated dark chocolate and sifted cocoa powder.

Pop in the fridge to firm up for an hour and voila! Your Tiramisu is done. Enjoy!
