If you only try one of my recipes this week then make it this one!
It’s easy peasy orange squeezy and the flavour is out of this world.
Orange and harissa are a beautiful flavour combo, spicy with harissa heat and finger lickingly sweet and sticky.
Here's how......
Ingredients
8 free range chicken thighs
4 tbsp orange marmalade
2 tsp rose harissa paste
½ tsp dried chilli flakes
½ tsp ground cumin
2 garlic cloves grated
Juice and zest from ½ orange
½ tsp salt
Good grind of black pepper
3 tbsp olive oil
Method
Mix all the marinade ingredients together, then trim and score the thighs deeply.
Massage in the marinade place in a roasting tin then cover in foil and refrigerate for around 3 hours.
Remove from the fridge and allow to come up to room temperature for 30 mins.
Preheat the oven to 200c then put foil covered tray in the oven for 30 minutes.
Remove foil, baste with juices and marinade then put back in the oven for a further 20 minutes.
Enjoy with my delicious Puy lentil and feta salad.

Made this last night for supper and served with the puy lentil and feta salad. Wow!! This is a keeper. Amazing bursts of flavours. Our sort of food. This recipe is a keeper - so much so that it's already been hand written into my little book 'collected recipes' that go back 40 years. Only very special things go in there - those that I know I will cook again and again. Drooling over the other recipes - can't decide what to cook next now..
