Indulgent mac ‘n’ 4 cheese

Outrageously rich, super creamy and ultra-cheesy.. What’s not to love?

This is a super simple dish to make and will possibly be the best you’ve ever tasted.



Here's how..........




Ingredients

200g dried macaroni

50g butter

2 heaped tbsp plain flour

1 ½ pints heated whole milk

150g cheddar

50g parmesan

50g gouda

50g mozzarella (for topping)

1 tsp dijon mustard

½ tsp paprika

½ tsp garlic powder

½ tsp salt

½ tsp white pepper




Method

Bring a large pot of salted water to the boil. Plunge in your dried macaroni and bring back up to a rapid boil. This should only take 13-15 mins.

While your macaroni is cooking add butter to a large saucepan, on high heat. Add flour, paprika and garlic powder and cook until it forms a doughy paste.

Gradually add milk, don’t worry it will go lumpy, just whisk the lumps out.

You’ll now have a creamy white sauce.

Turn the heat to low and add mustard, parmesan cheddar and gouda, stir in well and set aside.

Drain the tender macaroni, then add to the cheesy sauce making sure every bit of macaroni is smothered.

Transfer to a deep baking dish and sprinkle the top with mozzarella.

Bubble up the cheesy topping for a few minutes under a hot grill until browned and blistered.

Serve with a crunchy salad and enjoy !
